WI votes for the final 2024 Resolution will be taken to NFWI's Annual Meeting in May by Delegates.  Help your WI to select it's preferred Resolution from the final shortlist by learning more about the proposed Resolutions and discussing the pros and cons of each.

Ingredients

- 100g soft margarine (chilled)

- 100g caster sugar

- 100g self-raising flour

- 1 teaspoon baking powder

- 2 eggs

- some green colouring (or whatever colour you have)

- flavouring of your choice (lemon extract/zest, vanilla extract, coffee extract etc.)

- a filling of your choice (jam, cream, buttercream etc.)

Method

1. Mix margarine, caster sugar, sifted flour, eggs, baking powder and flavouring until smooth and glossy.

2. Add the colouring and swirl.

3. Divide between 2 x 18cm (7 inch) sandwich tins that have been greased and lined.

4. Bake at 160C, 325F or Gas Mark 3 for 25-30 minutes.

5. When cooked turn onto a cooling rack covered with a tea towel.

6. When cooled, sandwich together with your choice of filling.
