With Real Bread Week taking place from the 15th until the 23rd February, I decided to make some bread this month.

I made the Best Seeded Soda Bread recipe from Waitrose. This recipe was very easy to follow and the bread simple to make. The result was also very good, but I think I could have done better.

The recipe calls for a “large deep, lidded, round cast-iron dish” to cook the bread in. I used the largest, lidded, pyrex casserole dish that I have (and which was perfect for a Nigella bread recipe I made before), but I don’t think this was quite big enough. The centre of the bread was slightly underbaked. I think that this was due to the smaller size of the dish. I should have cooked it for just a bit longer.

However, the bread was still very tasty and went down well with a selection of cheese and chutney. Yum!

March sees Mother’s Day on Sunday 30th. There are so many things that you could make either as a gift for your mother, to eat over a cup of tea and a chat with your mother or just to give to yourself as a treat

However, I have found a recipe on the WI Learning Hub website that I am going to try. It is Mother’s Day Milk Chocolate, Vanilla and White Chocolate Chip Muffins with Maple Frosting (click here for the recipe).
