Mother’s Day Milk Chocolate, Vanilla and White Chocolate Chip Muffins with Maple Frosting

With Mother’s Day taking place this past weekend I made some Mother’s Day Milk Chocolate, Vanilla and White Chocolate Chip Muffins with Maple Frosting to a WI recipe.

The recipe was very simple to follow and easy to make.

However, I think that there might be something wrong with the quantities for the icing. 500g of icing sugar just seems far too much. I didn’t use all of the icing sugar stated and had to keep on adding more and more maple syrup to stop the icing becoming too solid. The result was a very sweet icing, well too sweet for me anyway.

That said, my son loved them.

I would be happy to make the muffin part again, but would finish with a different frosting, an orange cream cheese frosting would go well or coffee buttercream.

** NEXT MONTH**

Easter falls in April this year and I will be busy making and baking a variety of things as gifts for friends and family.

One thing I plan on trying is another WI recipe, this time a Simnel Traybake from the Surrey Federation website. This looks like a simple version that should be a winner with all marzipan lovers. It can be decorated or left undecorated, which means that you can keep it simple or add as many embellishments as you wish, or as time allows.
